<p>And what about the remaining 32% of the population, are they really receiving adequate nutrients from diet alone? Research indicates the answer to this question is a resounding no. Eating plenty of fruits and vegetables, while necessary for good health, may offer a false sense of security. Furthermore, in some cases, the food we consume and the water we drink are more a cause for concern than a source of nutrition, endangering rather than benefiting our health.</p>
<p>These facts suggest we need to look beyond our diet to obtain sufficient supplies of vitamins, minerals and amino acids.</p>
<p>So how is it we have to take vitamins when our ancestors lived quite fine without them? The fact is that the soil in which our food is grown isn’t quite the same as it used to be. For instance, selenium, washed out from the upper layers of the soil during the ice ages, is deficient in most soils worldwide. Zinc, too, may be depleted in many soils. Dwarfism in males is frequent around the Mediterranean, where wheat, grown for 4,000 years on the same soil, has exhausted the zinc content.</p>
<p>Many epidemiological studies have focused on the role mineral-deficient soil plays in disease. The incidence of death from ischaemic heart disease and acute cardiac arrhythmias is increased in many regions where magnesium and/or selenium levels are reduced in soil and water. In Serbias Zlatibor district, a region with higher selenium soil content, residents have lower mortality rates from cancer and cardiovascular diseases and higher serum selenium and magnesium values compared with other Serbian regions. In Poland, the number of deaths from digestive tract and respiratory system malignancies was nearly threefold higher (27.67%) in one community with low magnesium soil content compared to a community with high magnesium soil content, where only 9.87% of deaths resulted from malignancies.</p>
<p>In the United States, Texas has one of the highest selenium concentrations, Florida one of the lowest. Massachusetts, Pennsylvania, New Jersey, New York, Ohio, Connecticut and Maryland also have low selenium soil content, while California is in the mid-range. Levels of selenium in test subjects from 11 states corresponded with levels in the soil.</p>
<p>Researchers have determined that the cancer mortality rate rises in US counties with low levels of forage selenium. The lower the level of selenium in a county, the higher the rates of death from cancers of the lung, rectum, bladder, esophagus, cervix and breast. According to the researchers, this remarkable degree of consistency strengthens the likelihood of a causal relationship between low selenium status and an increased risk of cancer mortality.</p>
<p>Another consideration in deciding whether we are getting enough vitamins and nutrients from our foods is to recognize whether the diet truly provides adequate amounts of each form of a particular vitamin. For instance, all of the different forms of vitamin E (tocopherols, tocotrienols) play important roles in the body, but are not found in every food that contains vitamin E. Depending on variety, the gamma-tocopherol content of pumpkin seeds is about 5-10 times as much as that of alpha-tocopherol.</p>
<p>Often, in order to obtain an effective dose of a certain nutrient, the required quantity is far more than even the healthiest eater probably wants to consume. A good example is indole-3-carbinol (I3C) and its metabolite diindolylmethane (DIM). I3C is a phytonutrient derived from cruciferous vegetables (cabbage, broccoli, cauliflower and brussels sprouts). I3C and DIM have been shown to inhibit breast, cervical-vaginal, and skin cancer. In order to eat enough cruciferous vegetables to achieve beneficial effects, a pound or more of cabbage or cauliflower daily would have to be consumed. Furthermore, the concentration of I3C varies greatly depending on the seed strain, climate and soil. Cabbage grown in Israel, for instance, has been found to contain virtually no I3C.</p>
<p>There are other considerations that factor into why we don’t get enough nutrients in our diet such as over cooking foods and irradiation. The fact is, things aren’t the same as when our ancestors farmed the land and our food isn’t as pure. So do eat your brussel sprouts but also remember to take your vitamins.</p>

However, that is more a reflection of how contemporary the research still is than of an intrinsic lack of knowledge.</p>
<p>To apply the term essential to a sugar might seem somewhat strange, given the bad press of these substances in the past, but times have changed. Over the past few years it has come to light that those substances that at one time were thought to worth little more than body fat promoters are in fact absolutely essential to the well being of, not only the human body, but all mammalian life.</p>
<p>It has been proved that certain monosaccharides, or simple sugars, are essential in the regulation of the body&#8217;s immune system that allows us to fight disease and other conditions such as allergies. They combine with proteins and fats in the body to form glycoproteins and glycolipids that are given the general term glycoforms that act as chemical messengers and inform other cells of their identity.</p>
<p>Without this form of communication, cells would not be able to distinguish their brothers from intruders, and the immune system would either kill off all cells or none. However, the acidity of the cranberry juice can detract from the effectiveness of the sugar as a bactericide since many bacteria love acidic conditions. They are sugars known as monosaccharides, as opposed to the disaccharides such as sucrose, or common sugar, that is formed from glucose and fructose. Glucose is another such essential sugar, though fructose is not, causing more harm than good. Each of these sugars is essential to the mammalian biochemistry that was evolved over millions of years of a vegetarian diet. Human biochemistry diverged to include an omnivorous diet that depended a great deal not only on animal flesh, but on roots, canes, corn husks and other cereal seeds in their original form. This is why whole unprocessed foods are important in the diet.</p>
<p>Now, however, the human diet has changed, with intensive agricultural techniques and the refinement of foods to eliminate fibers and husks combining with processing techniques to render much of our food deficient in many nutrients that were in abundance in years past. Among those nutrients that have become relatively scarcer in our diet are the essential monosaccharides that, until recently, were not considered important.</p>
<p>In fact, just over ten years it was thought that all sugars were burned in the body to produce energy that, if not immediately used, was stored as glycogen as a short-term energy source or fats as a longer term source of energy. In effect, they were regarded as irrelevant to the diet and even by many medical practitioners as harmful. It is now known that these eight glyconutrients as they are called play a much more fundamental role in human biochemistry and in ensuring our survival than was previously understood.</p>
<p>Incidentally, you will generally see the word mannose related to D-mannose. The &#8216;D&#8217; stands for &#8216;dextro&#8217; which comes from the Latin root for &#8216;right&#8217;. Sinister and dexter are left and right in Latin, and the term dextrous was applied originally to one who could manipulate well with the right hand and fingers. Through time it became a definition for manipulation ability, or use of the fingers and hands, in general. However, in D-mannose it refers to the stereochemistry of the molecule, or the way that it is bent to the right. That is the common form, and will be referred to here as simply &#8216;mannose&#8217;.</p>
<p>Mannose is one of these eight sugars that are essential for the proper functioning of the mammalian immune system, and that includes humans. A deficiency in any one of them will lead to a deficiency in the effectiveness of the immune system to fight disease. Not only disease, but failure of the immune system will lead to conditions such as allergies, possibly psoriasis, various forms of arthritis, and infections of many parts of the body, particularly of the respiratory tract that is one of the main causes of death in AIDS victims, another immune system disease.</p>
<p>The science and biochemistry of allergies is also not fully understood, but the immune system is now believed to play a significant part. Knowledge of any dietary element pertaining to this as yet mysterious part of the way the human body fights infection must be taken seriously, and dietary deficiencies made up by the use of supplements.</p>
<p>There are those that believe supplements to be not only unnecessary, but also damaging to health. However, much of this is born from ignorance and superstition, and modern biochemical knowledge must be used to ensure that all of us are supplied with the chemicals necessary for our well being. All food we eat, and nutrients we consume, are chemicals. That appears to be a bad word to some, but it is fact and we have to ensure that our chemical intake is sufficient to meet the needs of the biochemistry of our bodies. It is the immune system that controls disease, creates and releases antibodies to kill off invading cells, controls the disposition of white blood cells that envelope and devour foreigners and determines how quickly we recover from minor wounds or serious injuries.</p>
<p>In saying that, laboratory studies indicate that excessive amounts of mannose could lead to some birth defects, though this is only thought to be relevant for mannose supplements. Although these supplements are very effective for most people therefore, pregnant women should seek medical advice prior to using mannose supplements.</p>
<p>Keep in mind the benefits of mannose and those defects only occur with large excess intakes. Under medical supervision, mannose supplements should not present a hazard to anyone. This must not be considered a deterrent to others to whom that does not apply, since the glyconutrient mannose is too important a substance in the chemistry of life for us to ignore.</p>
